When it comes to cooking, I am not a pro still learning, but one thing about me is, I like trying different things just for fun.
I already did the Irish potatoes and bacon version of this recipe, but I will like to say I love this particular one most.
Maybe because people don’t use the purple potatoes as I expected, but then this turned out very good and delicious.
3 big sweet purple potatoes, peeled and cut into 2
6 wide range bacon or 12 small size bacon. ( I used 12 slices of bacon because they were not wide).
2 green onions, tiny sliced.
Preheat your oven to 200 C. Line a baking sheet with parchment paper.
Peel and wash your sweet potatoes, cut them half lengthwise, to make 6 servings.
Using a scoop to scoop out the potatoes inner flesh as shown in the picture above.
Fully rap the back of the potatoes with bacon and place them on your prepared baking sheet.
Bake them for 30-35 minutes, take out the tray, break your eggs and fill the potatoes, one egg per potato. Add your onion and return the tray back to the oven, bake for another 10 minutes.
Garnish with lime juice if desired and serve.
