Healthy Vegetables Tortilla Floral.

This right here is one of the easiest and healthiest recipe I made during the last weekend.

It is very easy to make, delicious and healthy, all what you need for this recipe can be found in your kitchen, because I am sure you have them.

INGREDIENTS.

1 green bell pepper, diced

1 yellow bell pepper, diced

1 red bell pepper, diced,

1 medium onion, diced

9-10 eggs, beaten

2 big Irish potatoes, diced

2 tbsp shredded mozzarella.

INSTRUCTIONS.

Preheat your oven to 180 C.

Dice your potatoes, onion, green, yellow and red bell peppers, but cut the heads of the peppers and keep them for later.

Heat a pan over medium high heat, add your peppers, onions and potatoes, add a dash of oil and cook for a few minutes until tender.

Place your eggs in a big mixing bowl, add mozzarella and beat the eggs until well mixed.

Pour your mixture over the cooked vegetables and cook for few minutes. As it start to cook, place the peppers heads to form a flower as shown in the picture above.

Transfer the pan to your preheated oven and bake for 8-10 minutes.

Remove from the oven and garnish with parsley leaves.

Serve immediately and enjoy.
