Healthy Vegetables Tortilla Floral.

This right here is one of the easiest and healthiest recipe I made during the last weekend.

It is very easy to make, delicious and healthy, all what you need for this recipe can be found in your kitchen, because I am sure you have them.


1 green bell pepper, diced

1 yellow bell pepper, diced

1 red bell pepper, diced,

1 medium onion, diced

9-10 eggs, beaten

2 big Irish potatoes, diced

2 tbsp shredded mozzarella.


Preheat your oven to 180 C.

Dice your potatoes, onion, green, yellow and red bell peppers, but cut the heads of the peppers and keep them for later.

Heat a pan over medium high heat, add your peppers, onions and potatoes, add a dash of oil and cook for a few minutes until tender.

Place your eggs in a big mixing bowl, add mozzarella and beat the eggs until well mixed.

Pour your mixture over the cooked vegetables and cook for few minutes. As it start to cook, place the peppers heads to form a flower as shown in the picture above.

Transfer the pan to your preheated oven and bake for 8-10 minutes.

Remove from the oven and garnish with parsley leaves.

Serve immediately and enjoy.






Chipotle Sausage Egg Muffins.

There is nothing wrong in trying eggs in a different way, egg is very good to the body and doesn’t cost much.

I made this few days ago and it was very delicious, will still make it again.

1/2 lb. nitrate free chicken sausage, chopped small or ground turkey.

2 fresh garlic cloves, minced

1/4 cup chipotle pepper in adobo sauce

Sea salt and fresh ground black pepper to taste

12 eggs

1/4 cup milk of choice ( I used unsweetened almond milk)
1/3 cup shredded cheddar jack cheese.


Preheat your oven to 180 C, lightly spray or brush a standard/regular sized muffin tray with oil.

Heat a large skillet over medium heat. Add sausage and garlic, cook for 6 minutes while breaking up the meat with a wooden spoon until brown.

Drain grease if needed, then add chipotle peppers and stir well to combine.

Meanwhile, in a large glass bowl, whisk eggs, milk, salt and pepper.

Divide the sausage mixture equally among each prepared muffin cup.

On top of the sausage pour in the egg mixture into each muffin cup until each cup has an equal amount.

Sprinkle each with the shredded cheese.

Bake in the preheated oven for 15-20 minutes until eggs are set and the tops are puffed and golden.

Serve and enjoy!

Breakfast Egg Plus Broccoli Bars.

These protein packed delicious breakfast bars are known to convince even the picky eaters to eat this.

This is one of the best way to prepare and eat your vegetables for the most nutritional value.


1 medium head of broccoli

2 medium carrots, peeled

1 tbsp olive or avocado oil

8 large eggs

1/4 cup oat flour (ground oats)

1/2 cup shredded mozzarella cheese

1/4 tsp celery salt

1/4 tsp garlic salt

Freshly ground black pepper to taste.


Preheat your oven to 180 C, line a rectangular 8×11-inch baking dish with parchment paper.

Using a hand grater, grate the carrots and set aside.

Hold the broccoli with stem facing up and separate the florets making downward cuts from the stem.

Very thinly chop the broccoli florets.

Heat oil in a large skillet over medium-high heat.

Add in the broccoli and shredded carrots and sauté for 3 minutes until they are tender crisp.

Remove from the heat and set aside.

In a large mixing bowl, crack your eggs and add in oat flour, shredded cheese and seasonings.

Whisk until well combined. Then fold in the sautéed vegetables.

Pour the mixture into the prepared dish and bake for 15-20 minutes or until a knife inserted in the centre comes out clean.

Remove from the oven and allow to cool a bit.

Slice into bars and serve.
